Executive Chef Michelle Biondi and Executive Sous Chef Sammy Moyo at AURUM restaurant are looking towards European elegance with the soul of South African flavours to craft their seasonal menu for summer 2025.

It’s not just a menu update, it’s an invitation to explore a selection of carefully developed dishes that surprise, comfort, and delight. For starters, the chef’s recommendations are salmon draped in beetroot, paired with creamy avocado and finished with delicate lemon pearls that glisten like jewels on the plate, and the bold, zesty chipotle octopus.

The main courses, such as the tender lamb with pommes fondant and elevated ostrich fillet: a South African jewel with colourful vegetables and a golden risotto croquette, create a sense of indulgence and comfort. End off with AURUM restaurant’s gourmet take on decadent cheesecake with flavours of yuzu, basil, and white chocolate.
