All about the new menu
For the new menu at Lacuna Bistro, Food and Beverage Manager Ofentse Morake and Executive Sous Chef Thokozane Shongwe look closer to home to help fine-tune the dishes you should be dining on right now. The duo is inspired by Sandton’s unique position as both South Africa’s financial hub and a melting pot of cultures. The chefs and their team want guests to walk away feeling a sense of place and belonging. “The food should spark recognition — whether it’s the comfort of a milk tart that reminds them of home, or the surprise of pap spheres reimagined in a way they’ve never seen before,” says Morake.
Their “Parancini” with Chakalaka Purée is a playful reimagining of South Africa’s most traditional staple, pap. Instead of serving it plainly, it is transformed into golden, parmesan-dusted spheres – like Italian arancini. Tartare served with fishcakes nods to the Cape Malay spice traditions—mild curry, tangy pickle, aromatic warmth—layered into a familiar Western format. The “From the Coals” section celebrates open-flame cooking, which is central to South African food culture (braai). Sauces like sheba (tomato and onion relish), chimichurri, and peri cream showcase local and global flavour traditions, and tie into the communal culture of the braai.
Seasonality of produce is a deciding factor in making sure their offering remains dynamic throughout the year.

Elevate your dining with Lacuna Bistro’s thoughtfully curated pairing experience celebrating seasonal South African flavours, from sweet apricot and fresh prawns to comforting cassoulet, sweet corn and bright berries.
The long table setup accommodates 30 guests who are treated to an intimate chef-led journey of the senses. Each course from the Chef’s Table menu is matched with a selection of fine wines or artisanal beverages, chosen to complement and enhance the flavours of every dish. From crisp, refreshing notes to rich, complex finishes, each pairing is designed to create a harmonious balance on the palate.
